Pat Kilsdonk understands how the beef checkoff impacts his Wisconsin veal operation.

Pat, who partners with veal growers throughout central Wisconsin, sees the benefits of pairing veal and beef checkoff dollars to extend his investment.

“Actually, the best part of the checkoff is how we leverage the beef program,” says Pat. “We’re able to enhance the value of veal through joint projects, such as the veal muscle profiling study, which has helped us introduce new veal products for both retail and foodservice applications.”

By investing in the checkoff, producers like Pat are helping increase veal’s presence, both on the menu and in the meat case.
