Beef Boot Camp

Fifteen meat department managers from various Associated Wholesale Grocers (AWG)-supplied retail stores recently participated in a full-day, beef checkoff-funded Beef Boot Camp training session hosted by the Kansas Beef Council. AWG is a retailer-owned cooperative serving more than 2,400 retail member stores with a complete offering of grocery, meat, produce, specialty foods, health care, and general merchandise items. Participants studied appropriate cooking methods for multiple beef cuts and practiced these skills in hands-on cooking labs showcasing braising, or pot roasting, and pan frying. The cooking labs followed a recipe and were designed to simulate the actual experience of an everyday customer. The teaching also included a beef-nutrition overview and a session about beef production and ranch life. The workshop challenged meat department managers, who are viewed as trusted resources by consumers, to broaden their skills and encourage customer interaction.

The Beef Checkoff Program was established as part of the 1985 Farm Bill. The checkoff assesses $1 per head on the sale of live domestic and imported cattle, in addition to a comparable assessment on imported beef and beef products. States retain up to 50 cents on the dollar and forward the other 50 cents per head to the Cattlemen’s Beef Promotion and Research Board, which administers the national checkoff program, subject to USDA approval.
