Beef Cutouts, Weights & Yields

A new checkoff-funded 12-page, four-color booklet – Beef Cuts, Primal & Subprimal Weights and Yields – was derived from the beef carcass cutout calculator and helps improve understanding of estimated cutout, weights or yields of a beef carcass to respond better to questions about the average weight of a cut or a sub-primal, for example.
