Curious about color? The color of the lean (muscle) portion of a beef cut should be bright cherry-red unless it has been cured or cooked. When first cut, beef is a dark, purplish-red color and vacuum-packaged beef will have this same dark color. After cutting and exposure to air, the surface of beef will become bright red due to a reaction with oxygen.
