Cutting Up

In an effort to promote new beef cuts, the Beef Checkoff Program recently provided a cutting demonstration and presentation at the 2011 North American Meat Processors (NAMP) Meat Industry Management Conference in Chicago, Ill. The checkoff session -- "Roaming Around the Round" -- highlighted new checkoff funded cuts from the beef round, including the Santa Fe Cut, Round Petite Tender, San Antonio Steak, Tucson Cut, Braison Cut and Merlot Cut.
