Leaner and Meaner

The beef checkoff is collaborating with USDA’s Agriculture Research Service, Texas Tech University, Texas A&M University and Colorado State University to update the nutritional analysis of beef cuts in the USDA National Nutrient Database for Standard Reverence (SR). With removal of the data on cuts with higher fat trim, the SR was updated last year to reflect today’s leaner beef sold from the retail meat case. SR23 is being released with updated nutrient data on 14 cuts from the chuck, including four new cuts developed by the checkoff, as well as four traditional cuts never before analyzed and six cuts currently available at ¼” or ½” fat trim only.
