Research Information Available

The Research, Education & Innovation department has produced a number of materials that help share checkoff-funded research findings from the product enhancement, human nutrition and beef safety research programs. These publications cover a variety of topics, ranging from information on factors that affect tenderness to beef nutrition information and updates on safety research. 

Among the booklets available from the checkoff-funded product enhancement program are two publications on pre-harvest factors affecting beef tenderness. The Pre-Harvest Cattle Management Practices for Enhancing Beef Tenderness booklet describes how industry innovation has made it possible to manage product attributes across the entire beef chain. Since tenderness is a key determinant of eating satisfaction, it is important to understand how it can be enhanced at the pre-harvest level. Pre-Harvest Factors Affecting Beef Tenderness in Heifers discusses the existing research which suggests that beef produced by heifers is more likely to be tough compared to beef from steers. It explains the differences and provides tips for heifer management to minimize tenderness problems.
