Q: How do you prepare the perfect holiday roast?
A: Three easy steps for the perfect holiday roast.
1. Preheat oven.
2. Season roast, if desired. Place refrigerated roast, fat side up, on rack in shallow roasting pan. Insert oven-proof meat thermometer so tip is centered in the thickest part of the roast, not resting in fat or touching bone. Do not add water. Do not cover unless specified in the Holiday Beef Roasting Chart.
3. Roast according to time specified in chart. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15-20 minutes.
