Putting More Beef on More Menus and Tables
Your beef checkoff works diligently to get more beef on more restaurant menus and in more grocer meat cases by working in partnership with processors, retailers and foodservice operators to keep beef offerings in line with constantly changing consumer demands.

Major processor rolls out new beef cuts — With its new chuck roll cuts, the beef checkoff has made terrific inroads with industry partners such as Tyson-IBP to bring new cuts to consumers. In March, Tyson-IBP began selling the four-piece chuck roll combo pack, which offers retailers and foodservice operators the chuck eye roll (further cut into Delmonico steaks, America’s Beef roasts and Country-Style ribs), the Serratus Ventralis (Denver cut), the Splenius (Sierra cut) and the Rhomboideus, which is generally cut into stew meat. For more information, cutting guides, and cooking applications, visit Beef Innovations Group.
-
Leveraging your investment through foodservice channels — Over a six-year period, the checkoff allocated just $2.4 million in checkoff dollars to foodservice partnerships, compared to our restaurant partners’ investments of nearly $140 million. That’s nearly $60 in partner investments for every checkoff dollar invested! For more information about checkoff-funded foodservice programs, go to Foodservice.

Ensuring Consumer Confidence and Beef Safety
The checkoff invests in extensive research efforts to ensure maintenance of the safest beef supply possible, including efforts in product enhancement, new-product development and nutrition research. At the very base is market research, which helps rank research priorities by tracking consumer confidence and concerns about beef.
- Sixth annual checkoff-funded Beef Industry Safety Summit — More than 160 participants focused on identifying new solutions for reducing foodborne pathogens. Discussions included emerging safety issues and development of solutions to safety challenges and science-based strategies to help each sector of the production chain reduce foodborne pathogen incidence. For more information about the Beef Industry Food Safety Council, go to BIFSCo.
- Checkoff research lauds moderate protein diet — A moderate protein diet (1.6 g/kg protein) is more effective than a conventional high-carbohydrate (o.8 g/kg protein) diet for fat mass loss and body-composition improvement during initial weight loss and long-term maintenance, according to new beef checkoff-funded research conducted by Dr. Don Layman at the University of Illinois.
